Cornicabra olives are the second most widely grown variety in Spain. They have a dark purple colour and a well-balanced flavour, with a pleasing bitterness and hints of spice. Their shape is not completely round, with one of their edges ending in a horn-shape, a feature which gives the variety its name. 

Some olives may have suffered a discoloration process. This is because this olives have a higher pH than other types of black olives. This also contributes to their great flavour.
